Elegant enough for a party, easy enough for dinner--tender lettuce envelops a fragrant stir-fry of chicken, soy sauce, garlic, carrots, Shiitake mushrooms, and Kashi® 7 Whole Grain Pilaf.


  • 1 packet (6.5 oz.) Kashi® 7 Whole Grain Pilaf
  • 2 boneless, skinless, free-range chicken breast halves, cut into 1/4- to 1/2-inch pieces (about 12 oz. total)
  • 2 teaspoons naturally-prepared soy sauce
  • 1 large head organic Boston or bibb lettuce
  • 1 teaspoon expeller-pressed canola oil
  • 2 cloves organic garlic, minced
  • 1/3 cup finely chopped organic carrot
  • 1 can (8 oz.) sliced water chestnuts, drained and finely chopped
  • 2 organic green onions, sliced
  • 5 organic shiitake mushrooms, finely chopped
  • 2 teaspoons naturally-prepared soy sauce
  • 4 teaspoons naturally-prepared hoisin sauce
  • Naturally-prepared hoisin sauce (optional)


1. Cook Kashi® 7 Whole Grain Pilaf according to package directions. Set aside.

2. Meanwhile, marinate diced chicken breast in the 2 teaspoons soy sauce while preparing the remaining ingredients.

3. Separate lettuce leaves into cups. (Large leaves may be cut in half to make 2 cups.)

4. In large nonstick skillet heat oil over medium-high heat. Add chicken and garlic to skillet Cook and stir for 3 to 4 minutes or until chicken is no longer pink. Add carrot. Stir-fry for 1 minute more. Add cooked pilaf. Cook and stir for 1 minute more. Stir in water chestnuts, mushrooms, green onions, the 4 teaspoons hoisin sauce and the remaining 2 teaspoons soy sauce. Cook and stir for 1 to 2 minutes more or until heated through.

5. Serve lettuce cups and chicken mixture separately. Have guests spoon chicken mixture into lettuce cups and roll-up. Serve with additional hoisin sauce (if desired).
